BBQ CHICKEN PIZZA
This recipe is for 1 pizza. If you’re cooking more than one, or if the fancy strikes,
you can use a rotisserie chicken, shredded.
1 pizza crust
BBQ sauce
2 skinless, boneless chicken breasts, sliced or diced
½ red onion, quartered and sliced
½ yellow bell pepper, sliced
handful sliced mushrooms
grated mozzarella
Preheat oven to 400F.
Spread a thin layer of BBQ sauce on the pizza crust.
Stir-fry chicken in a bit of olive oil, till golden. Remove chicken, drain on paper towel, then spread on pizza.
Stir-fry vegetables till soft, about 2 minutes, spread on pizza.
Top off with a generous sprinkling of mozzarella. Bake until cheese is melted and starting to turn golden.
