CAJUN FISH KABOBS
1 tbsp olive oil
1 clove garlic, minced
1 tsp paprika
¾ tsp pepper
½ tsp each dry mustard and dried oregano
pinch cayenne pepper
1 lb salmon filets, skinned
In bowl, stir together oil, garlic, paprika, pepper, mustard, oregano, chili powder, and cayenne pepper.
Cut salmon into 1 ½” chunks; add to bowl and gently toss to coat evenly. Allow to marinate for about 30 minutes. Thread onto 4 soaked wooden skewers.
Place kabobs on greased grill over medium heat, turning as each side is grilled, until fish is opaque and flakes easily (about 6-10 minutes in all).
