CARAMELISED FENNEL AND ONION PIZZA
2 Tbsp olive oil
1 large onion, thinly sliced
1 large fennel bulb, cored and thinly sliced
8 oz whole-milk fresh mozzarella cheese, coarsely grated
freshly shaved Parmesan cheese
Prepare pizza dough, or buy pre-made.
Add olive oil to saucepan. Sauté fennel and onions on medium heat until tender and onions begin to brown.
Set oven to 425°F.
Spread a thin layer of olive oil on the pizza dough, then sprinkle mozzarella on top. Spread onion/fennel mix on top of this, then season with salt and pepper.
Place pizza in oven for 15 minutes or until cheese begins to brown.
Sprinkle with Parmesan and serve.
