CHICKPEA SANDWICH FILLING
1 can chickpeas, drained and rinsed
ΒΌ cup green onion, chopped
1 stalk celery, chopped
1 tsp dried dill
2 Tbsp mayonnaise (to taste)
1 Tbsp lemon juice
Salt and pepper to taste
Pour chickpeas into a mixing bowl, and mash with a fork.
Mix in the green onion, celery, dill, mayonnaise, lemon juice, and salt and pepper.
Add more lemon juice and/or mayonnaise if mixture seems too dry.
Serve over bread or in a pita, with lettuce and/or tomato.
