CITRUS AND ONION SALAD
Serves 2
(The portions could easily be doubled or trebled depending on number of guests).
3 oranges or other citrus, peeled, sliced into rounds, and seeded
1 small onion, thinly sliced (rings or arcs)
6 black olives
¼ tsp cumin seeds, toasted and crushed
One handful of fresh mint leaves, shredded
1 Tbsp extra virgin olive oil
Salt
Arrange the orange and citrus slices on a plate. Top with the onion slices, olives, mint, and cumin. Drizzle with olive oil and sprinkle with salt.
Serve immediately or let it sit for a little while for the flavors to combine.
