1 lb shrimp, shelled, and de-veined
2 tbsp cooking oil
1 large onion, chopped
6 green onions, sliced (or a handful of chives)
1-2 tbsp curry powder
2-3 tomatoes, diced
In the cooking oil, lightly fry the onions. Add curry powder and simmer for about 5 minutes.
Add shrimp and tomatoes.
Simmer until shrimp are cooked, about 15 minutes (less, if using cooked shrimp).
Serve on a bed of rice.
