GREEK SALAD
Mixed lettuce, torn in pieces
4 tomatoes, cut in chunks
¼ large red onion, chopped
2 zucchini (or 1 cucumber), sliced
1 can of black olives, drained
1 cup of crumbled feta
½ cup olive oil
2 Tbsp lemon juice
1 Tbsp wine vinegar (red or white)
1 tsp dried oregano
Black pepper
Mix dressing ingredients in a glass measuring cup and allow to stand for an hour or two.
On a bed of lettuce, layer the tomatoes, zucchini, onion and olives.
Top with a generous helping of crumbled feta.
Drizzle with dressing and serve with pita.
