GRILLED GARLIC JUMBO SHRIMP and

CHERRY TOMATO SKEWERS

Make certain to soak wooden skewers in water for min. 30 minutes before using on grill. Plan ahead: shrimp marinate for min. 5 hours.

24 large tiger shrimp, shelled and deveined

24 cherry tomatoes

24 large cloves of garlic (ends cut off)

½ tbsp dried oregano

½ tbsp dried basil

½ tbsp (or more) dried chili pepper flakes

½ cup olive oil

1 ½ tbsp Worcestershire sauce

8 wooden skewers

In a large bowl, combine ingredients, including garlic, but not tomatoes.

Cover and marinate for 5 hours.

Soak skewers for a minimum of 30 minutes before threading shrimp.

Place one shrimp on the skewer sideways so they will not slip, then a piece of garlic, then a cherry tomato; repeat so there are 3 of each per skewer.

Repeat with the remaining skewers.

Grill, turning occasionally, for about 5 minutes or until the shrimp are pink in colour.

Serves 4.
