ITALIAN PASTA SALAD
Serves 6-8
Dressing
4 Tbsp olive oil
Pinch of sugar
Juice of 1 lemon
1 tsp prepared mustard
2 tsp dry oregano
2 cloves garlic, crushed
Salt and pepper, to taste
Salad
1 bag (454g) shell pasta (small preferred)
Black olives, cut in half lengthwise
Thick slices of salami, chopped
½ red onion, chopped fine
Handful of fresh basil leaves, chopped
1 small jar marinated artichoke hearts (optional)
Sunflower seeds or toasted pine nuts (optional)
In a large bowl mix the oil, sugar, lemon juice, mustard, oregano, garlic, salt and pepper.
Cook the pasta till al dente, drain and toss in the bowl with the dressing. Allow to cool.
Add the remaining ingredients to the cold pasta and mix well.
Adjust seasoning to taste.
