ITALIAN SAUSAGE & PEPPER STIR FRY

Serves ???

2 Tbsp olive oil

6-8 Italian sausages, cooked & sliced

1 yellow & 1 red onion, quartered & sliced

4 cloves garlic, chopped

2 differently-coloured peppers, cored & sliced thin

1 tsp basil

1 tsp oregano

Balsamic vinegar, and/or

White wine

S&P

If using BBQ sausages, cool & slice. Otherwise, boil sausages until done, then cool & slice.

Fry sausage rounds in olive oil until cooked/browned, then remove to a plate.

Add onions and fry until soft. Add garlic and peppers, stir fry until tender. Season with spices, sprinkle with balsamic and/or wine, and continue cooking until veggies are tender.

Return sausages to pan, sprinkle with wine, and cover for 15 minutes on low heat.

Serve over cooked linguine, on buns, or on their own.

This is an excellent way to use up leftover BBQ’d sausages.

In fact, BBQ some extra, just to make sure you have leftovers!
