Serves 2

3 Tbsp avocado or olive oil, for cooking
1 lb (450 g) ground pork
2 cloves garlic, minced
½ onion, thinly sliced
2-3 carrots, grated
½ bok choy, thinly sliced
2 Tbsp soy sauce
1 tsp toasted sesame oil
Fish sauce (optional but recommended)
1 green onion, chopped for garnish

Add the oil to a hot frying pan and add in pork. Cook until browned.

Then add the garlic, onions, carrot, and bok choy. Cover if possible and cook until softened.

Add the soy sauce and sesame oil (and fish sauce).

Top with green onions for garnish.

Serve on rice if you’re not going keto.

Double the ingredients to have it two nights running, to use up the full onion & bok choy, e.g.
