Makes 1 cup
1 large clove garlic
¼ cup (60mL) tahini
½ cup (125mL) fresh lemon juice (about 3 large lemons)
2-4 Tbsp nutritional yeast, to taste
⅓ to ½ cup EVOO, to taste
½ to ¾ tsp fine sea salt, to taste
Freshly ground black pepper
In a mini food processor, pulse garlic until smooth.
Add the rest of the ingredients, and process until smooth. Taste and adjust seasonings.
Will keep in the fridge for around a week; stir well before use. Can freeze for up to 1 month.
