Lobster meat, diced, from 1-2 cooked lobsters

2 ribs finely chopped celery

handful snipped chives

⅔ cup mayonnaise

⅓ cup sour cream

1 Tbsp lemon juice

dash hot pepper sauce

pepper, to taste

bread rolls, split and buttered

leaf lettuce

In a small bowl, mix lobster meat, celery and chives.

In a large bowl, mix mayonnaise, sour cream, lemon juice, pepper and hot pepper sauce.

Add dry ingredients to sauce and mix well.

Butter cut sides of buns.

Heat a cast iron skillet over medium-high heat.

Place buns, cut side down, in skillet.

Cook 2 minutes each side, until toasted.

Line each roll with lettuce and top with lobster mixture.
