PEPPER PIZZA
PEPPER PIZZA
2 tsp olive oil
1 onion, thinly sliced
1 red and 2 yellow peppers, seeded and sliced
2 garlic cloves, crushed
1 can diced tomatoes, drained
grated Italiano cheese mix (or your choice of cheese)
pitted black olives
sprinkling of basil and black pepper
2 thin pizza bases
Preheat oven to 425F.
Sauté the onion in the oil until soft, then stir in the peppers, garlic, and tomatoes. Cover and simmer for 30 minutes.
Lightly oil the pizza bases and spread cheese on top.
Spread the topping over the cheese, sprinkle with basil and black pepper, and dot with olives.
Bake until crust is lightly golden.
