POLO-GRECO FISH
3 Tbsp butter
1 large onion, diced
half a turnip, peeled and grated
3 carrots, peeled and grated
1 parsnip, peeled and grated
1 can tomato paste
garlic, paprika, curry powder and hot sauce, to taste
1 box beer-battered frozen fish fillets
1 bag frozen french fries
Preheat oven as per instructions on fish & fries packages.
In a medium-sized pot, melt butter and stir-fry onion till translucent.
Add turnip, carrots and parsnip. Cook stirring, for a minute or two.
Stir a bit of water into the pot, cover and simmer on medium heat.
This is a good time to put the fish and fries into the oven.
Stir vegetables occasionally and cook until they are softened.
Add tomato paste and seasoning.
Drop temperature to low and keep warm until fish & fries are ready.
You can also grate a bit of cabbage into the vegetable mix, if you have any lying around.
