PORK ROUNDS IN PEACH SAUCE

1 pork filet, approx. 675G or 1 ½ lb

1 garlic clove, finely chopped

Pinch salt, pepper

10 ml extra virgin olive oil

5ml Louisiana hot sauce

125ml peach jam with ice wine

20ml fresh lime juice

15ml fresh coriander

4 sprigs coriander

Rub the pork filet with garlic, salt, pepper, and olive oil. Cook on med-high heat, turning pork, until completely cooked – 12 minutes for medium-rare, 22 for well done. Transfer to cutting board and let cool.

Mix hot sauce, peach jam, and 30ml of water in a pot. Once the mixture is hot, but not boiling, add chopped coriander and lime juice. Remove from heat.

Cut pork into 8 rounds. Serve on plates with desired accompaniment, and cover in sauce mixture.
