Makes about 8

¼ cup olive oil

½ small red onion, finely chopped

5 garlic cloves, minced

Juice of one lemon

1 Tbsp red wine vinegar

1 tsp Greek oregano

1 tsp Kosher salt

½ tsp freshly ground black pepper

¾ pound pork tenderloin, in cubes

Combine ingredients in a bowl or a bag. Add pork cubes, cover thoroughly, and refrigerate.

Soak skewers in water for an hour if necessary.

Optionally, cut the 2nd half of red onion into cubes to go on the skewers.

Heat a grill to medium-high heat. While heating, thread the pork on the skewers.

Grill for around 8 minutes or to desired doneness; turn as necessary. Let cool for 5 minutes.
