PUMPKIN MUFFINS

PUMPKIN MUFFINS

Preheat oven to 400°F.

Sift together:

1 ¾ cup all-purpose flour

¾ tsp salt

½ cup sugar

2 tsp baking powder

1 tsp cinnamon

1 tsp nutmeg

Grated orange rind from 2 oranges.

Beat in separate bowl:

2 eggs

Add to the eggs:

4 Tbsp melted butter

¾ cup milk

1 cup cooked pumpkin pulp (or canned)

Combine the liquid and the dry ingredients with a few swift strokes.

Fill well-greased muffin cups two-thirds full and bake 20-25 minutes.
