Serves ???

2 cups quinoa cooked in 4 cups water

1 bunch broccoli, chopped

1 cup snow peas

6 scallions, cut in 1” pieces

5 garlic cloves, chopped

1 Tbsp grated ginger

4 Tbsp sesame oil

2 cups cooked shrimp (or block of tofu, cubed)

water chestnuts (optional)

1-2 Tbsp maple syrup

soy sauce

Stir fry veggies in sesame oil.

Stir in maple syrup after veggies are done.

Add shrimp, water chestnuts (if using) and cooked quinoa.

Heat through.

Add soy sauce to taste.

Note: To cook quinoa, place grains and water in a microwaveable dish. Heat on HIGH for 22 minutes, remove from heat and stir with a fork. Replace lid and allow to rest for 5 minutes.
