SKILLET SAUSAGE AND POTATOES
3-4 tbsp olive oil
8-10 unpeeled red-skinned potatoes, cut into ½” cubes
2 large onions, chopped
8 smokies, sliced ¼” thick
1 tsp crushed thyme
1 ½ tsp ground cumin
Salt & pepper
Pour oil into a heavy skillet over medium-high heat.
Add potatoes and onions and cook for about 12 minutes, stirring frequently, until potatoes are nearly tender.
Add sausages and a tablespoon of oil, to prevent sticking.
Cook uncovered, about 10 minutes, till potatoes and onions are tender and slightly brown, stirring often.
Stir in spices; cook and stir for one minute more.
Preparation time: 20 minutes
Cooking time: 30 minutes
