SPICED LAMB WITH HUMMUS AND PICKLED ONIONS
¾ cup cider vinegar
2 tsp granulated sugar
¼ tsp salt
½ red onion, very thinly sliced
1 Tbsp olive oil
1 lb ground lamb
1 yellow onion, finely chopped
4 cloves garlic, minced
1 tsp chili powder
1 tsp ground coriander
½ tsp ground cumin
pinch each pepper, cinnamon and cayenne pepper
½ cup chopped fresh cilantro
2 small whole wheat pitas, each cut in 8 wedges
¾ cup hummus
In bowl, whisk together vinegar, sugar and half of the salt; stir in red onion. Let stand 25 minutes, stirring occasionally. Drain
Meanwhile, in nonstick skillet, heat half the oil over medium-highheat; cook lamb, until browned and crisp, about 5 minutes.
Drain, discard fat; transfer to bowl.
In same skillet, feat remaining oil over medium heat.
Add yellow onion; cook, stirring, until golden, about 5 minutes.
Stir in garlic, chili posder, coriander, cumin, cinnamon, cayenne pepper and remaining salt; cook for 1 minute.
Stir in lamb; cook until warmed, about 5 minutes.
Stir in most of cilantro.
Serve lamb mixture topped with hummus and pickled onions and sprinkled with reserved cilantro, with pita wedges on the side.
