SPINACH AND WHITE BEAN PIZZA

makes one pizza, serves two

1 pizza crust

olive oil

2 cloves garlic, minced

4-5 oz taleggio or mozzarella, sliced or pulled into small bits

¼ cup white beans

parmesan cheese

4 oz fresh spinach

Preheat oven to 550F.

Spread olive oil over dough, then evenly scatter with garlic, cheese, and white beans. Spread about one ounce of grated or sliced parmesan over the pizza.

Toss spinach in a large bowl with a bit of olive oil, salt, and pepper. Gently mound the spinach leaves in the center of the pizza, then place in oven and cook for 7 to 8 minutes, until the crust is brown on the edges and the spinach is wilted.

Makes 2 pizzas

2 pizza crusts

olive oil

freshly grated parmesan cheese

2 cups shredded rotisserie chicken

5 oz goat cheese, crumbled

2 sprigs rosemary

Heat oven to 425°F.

Brush pizza dough generously with olive oil and sprinkle lightly with parmesan. Scatter the chicken, goat cheese, and rosemary on top.

Bake until crust is golden, 8 to 10 minutes.

Drizzle with more olive oil and top with more parmesan.

RATATOUILLE PIZZA WITH CHICKEN

1 tsp olive oil

1 Japanese eggplant, halved lengthwise and sliced ¼” thick

1 yellow bell pepper, quartered and sliced into ¼” strips

1 small red onion, quartered and thinly sliced

1 box mushrooms, sliced

¾ tsp dried Italian seasoning

4 garlic cloves, minced

2 thin crust pizza bases

1 cup boneless, skinless rotisserie chicken pieces

1 cup pizza blend grated cheese (4 cheeses is good)

3 plum tomatoes, sliced ¼” thick

cooking spray

Preheat oven to 375°F.

Heat oil in large nonstick skillet over medium-high heat.

Add eggplant, bell pepper and onion; sauté 3 minutes or until eggplant begins to soften.

Reduce heat to medium.

Add mushrooms and cook 3 minutes, stirring frequently.

Add Italian seasoning and garlic; cook 1 minute stirring constantly. Remove from heat.

Place pizza bases on baking sheets.

Spread vegetable mixture evenly over crusts.

Arrange chicken over vegetable mixture, sprinkle evenly with cheese.

Arrange tomatoes over cheese and lightly coat with cooking spray.

Bake at 375°F for 25 minutes or until cheese is bubbly and tomatoes are softened.

PIZZA MARGHERITA PIZZA BIANCA

PIZZA MARGHERITA

2 ripe tomatoes

2 cloves garlic

Mozzarella

Basil, chopped

Pepper

Thinly slice the tomatoes and spread on paper towels to dry.

Take one thin crust pizza base, lightly dab with olive oil.

Scatter 2 finely chopped garlic cloves over base.

Cover with grated mozzarella. Top with tomato slices.

Scatter some chopped basil over tomato slices and sprinkle pepper over everything.

Bake at 400°F till slightly golden.

 

PIZZA BIANCA

1 jar marinated artichoke hearts, drained

1 small zucchini, sliced thin

2 cloves garlic, chopped fine

grated mozzarella

a few spoonfuls of crumbled feta

grated Parmigiano

oregano

Spread a little olive oil on a thin crust pizza base and scatter with the garlic.

Cover with mozzarella, add zucchini slices and artichoke hearts.

You may dab zucchini slices with a bit of olive oil, so they don’t dry out too much.

Top with crumbled feta, a bit of Parmigiano and a sprinkling of oregano.

Bake at 400°F till slightly golden.

2 tsp olive oil

1 onion, thinly sliced

1 red and 2 yellow peppers, seeded and sliced

2 garlic cloves, crushed

1 can diced tomatoes, drained

grated Italiano cheese mix (or your choice of cheese)

pitted black olives

sprinkling of basil and black pepper

2 thin pizza bases

Preheat oven to 425F.

Sauté the onion in the oil until soft, then stir in the peppers, garlic, and tomatoes. Cover and simmer for 30 minutes.

Lightly oil the pizza bases and spread cheese on top.

Spread the topping over the cheese, sprinkle with basil and black pepper, and dot with olives.

Bake until crust is lightly golden.

CARAMELISED FENNEL AND ONION PIZZA

2 Tbsp olive oil

1 large onion, thinly sliced

1 large fennel bulb, cored and thinly sliced

8 oz whole-milk fresh mozzarella cheese, coarsely grated

freshly shaved Parmesan cheese

Prepare pizza dough, or buy pre-made.

Add olive oil to saucepan. Sauté fennel and onions on medium heat until tender and onions begin to brown.

Set oven to 425°F.

Spread a thin layer of olive oil on the pizza dough, then sprinkle mozzarella on top. Spread onion/fennel mix on top of this, then season with salt and pepper.

Place pizza in oven for 15 minutes or until cheese begins to brown.

Sprinkle with Parmesan and serve.

This recipe is for 1 pizza. If you’re cooking more than one, or if the fancy strikes,

you can use a rotisserie chicken, shredded.

1 pizza crust

BBQ sauce

2 skinless, boneless chicken breasts, sliced or diced

½ red onion, quartered and sliced

½ yellow bell pepper, sliced

handful sliced mushrooms

grated mozzarella

Preheat oven to 400F.

Spread a thin layer of BBQ sauce on the pizza crust.

Stir-fry chicken in a bit of olive oil, till golden. Remove chicken, drain on paper towel, then spread on pizza.

Stir-fry vegetables till soft, about 2 minutes, spread on pizza.

Top off with a generous sprinkling of mozzarella. Bake until cheese is melted and starting to turn golden.
