TERIYAKI SALMON

1lb salmon filets, skin removed

2 tbsp soya sauce

2 tbsp ketchup

1 tsp rice vinegar

1 tbsp brown rice

1 clove garlic, crushed

4 tbsp peanut oil

4 leeks, sliced in rounds

red pepper flakes, to garnish

Cut salmon in 1 ¼” strips, place in a bowl.

Mix soya sauce, rice vinegar, sugar, and garlic.

Pour over fish, mix well, and leave to marinate 1 hour.

Heat oil in a large wok.

Add leeks and sauté over medium heat, for about 10 minutes.

Remove leeks from wok, set aside, and keep warm.

Add salmon and marinade, and stir fry until fish is done.

Serve over a bed of leeks, with plain rice and Asian vegetables.

Preparation time: 45 minutes
