Makes a large bowl full

1½ cups Greek yogurt

1 medium cucumber, peeled, seeded and grated coarsely

2 Tbsp lemon juice

1 large clove garlic, minced

2 Tbsp dried dill

sea salt to taste

Put grated cucumber in the middle of a clean dish towel and squeeze out excess water; or, put it in a strainer, sprinkle with salt, and press and stir with a spoon.

In a bowl, combine yogurt, cucumber, lemon juice, garlic and dill.

Slowly add salt until you’ve reached the desired taste.

Refrigerate for 1 hour to give flavors enough time to develop.

Serve with Chicken Gyros or other desired dish.
