UNSTUFFED CABBAGE AND BEEF

Serves 4

1 Tbsp olive oil

450g ground sirloin or ground round

1 small onion, chopped

1 can (14oz) crushed tomatoes

½ tsp sea salt

½ tsp ground pepper

1 bag (16oz) coleslaw mix

½ cup water

½ cup sour cream (optional)

In a large skillet with a lid, heat the oil on medium-high heat. Cook ground beef & onion, breaking the beef into small chunks, for 5 minutes, or until beef is no longer pink and onion is soft.

Stir in tomatoes, salt, and pepper. Add coleslaw mix and water and stir to combine. Reduce heat to medium, cover, and simmer, stirring occasionally, for 20 minutes or until cabbage is desired doneness.

Remove from heat and stir in sour cream, if desired. Taste for seasoning and add more salt & pepper, if needed.
